The Matzah Cover has three compartments labeled כהן (Cohen), לוי (Levi), ישראל (Israel) – see below for explanation.

In Jewish tradition, this 3-in-1 pouch is said to represent the 3 Patriachs – Abraham, Isaac and Jacob OR the 3 kinds of People of Israel – the Priests, the Levites and the Israelites (the masses).
Messianic believers suggest this is a representation of the triune nature of God – the Father, the Son and the Holy Spirit.
At the beginning of the Seder meal, the middle matzah is broken in two. One half is put back in the matzah tash; the other half is wrapped in the white satin napkin, now known as the Afikomen, and hidden away. This hidden matzah will reappear at the conclusion of the Passover meal.
